One of my goals for 2021 is to incorporate more whole foods made from quality nourishing ingredients. This is super easy when at home however when I am on the go or at work, this intention tends to go out the window. However, I recently found out about Tosh Foods and they have been a game changer! With Valentine’s day just a few weeks away, chocolate and strawberries are taking over my desserts! I love making yogurt parfaits because they are super easy to put together and a great choice for a protein packed treat! This Strawberry Chocolate Crumble Yogurt Parfait is the perfect blend of flavors for an indulgent treat for 2 this Valentine’s day.
Strawberry Chocolate Crumble Yogurt Parfait
For the Parfait
1 1/2 cups whole milk greek yogurt
1 cup strawberries, chopped
4 Tosh Chocolate Sandwich Cookies, crumbled
For The Strawberry Coulis
1 cup strawberries, chopped
1/2 cup coconut sugar
Place chopped strawberries and sugar in a small pot and stir constantly while bringing it to a boil. Let mixture boil for one minute and then simmer on medium heat for about 5 minutes. Place mixture in a food processor or blender and blend until it is a puree texture. Place in fridge for 30 minutes or until adequately cooled.
Using a large wide-mouthed cup, spoon 1/2 of the yogurt into the bottom. Next add a generous layer of the strawberry coulis on top. Place 1/2 of the chopped strawberries on top. Sprinkle 1/2 of the Tosh Chocolate Sandwich Cookies on top of the berries. Repeat all steps. Enjoy immediately!
