Being under a stay at home order has allowed me much more time to enjoy my favorite hobby…baking! I have been trying out so many different recipes over the past few weeks and it is something fun my girls and I look forward to every couple of days. siggi’s is my favorite yogurt (if you haven’t tried it yet you are missing out!) so baking with it is only natural. It is so rich and creamy and has a flavor unlike any other yogurt. I recently tried out this Raspberry Lemon Bread recipe from the siggi’s website and it was amazing! It is super moist and full of fresh flavor from the raspberry and lemon. I also added a glaze because I have a sweet tooth and this really put it over the top. If you are looking for an easy recipe, try this one! You will not be disappointed and it makes a huge loaf for everyone in the family to enjoy!
Glazed Raspberry Lemon Bread

Ingredients
2 cups all-purpose flour
1 cup sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp kosher salt
1 tsp lemon zest, packed
1 5.3 oz container siggi’s 0% raspberry skyr
½ cup (1 stick) butter, melted and cooled
2 large eggs
2 Tbsp fresh lemon juice
1 tsp vanilla extract
1 cup raspberries
For the Glaze:
1 cup confectioners sugar
1 tbsp milk
1 tbsp lemon juice
Directions
Preheat oven to 350. Butter and flour a 9×5 loaf pan. In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and lemon zest. In a separate bowl, whisk together butter, siggi’s 0% raspberry skyr, eggs, vanilla extract, and lemon juice.
Make a well in the center of the dry ingredients and add the skyr mixture; stir until just combined. Fold in the raspberries. Spoon the batter into the loaf pan and bake for 45-55 minutes, turning halfway, or until a toothpick or cake tester comes out clean. Place loaf pan on a wire cooling rack for 30 minutes before removing the bread.
While the bread is cooling make the glaze. Place all of the ingredients in a small mixing bowl to combine. Spread over top of bread once removed from the loaf pan. Enjoy!
