With the holidays here, I am looking forward to hosting guests and cooking all of our seasonal favorites. Every Christmas Eve, my daughters and I love to make a delicious baked ziti and Italian salad, along with Christmas cookies for dessert (and to put out for Santa!). With the base of many of our meals being oil, I look for the highest quality that provides the best balance of flavor.

European Extra Virgin Olive Oil is my first choice when it comes to choosing a quality oil. This oil is much different than others due to the method in which it is created. European Extra Virgin Olive Oil is made from the freshly pressed juices of olives, without the use of heat or chemicals. This ensures purity and freshness that is evident in it’s flavor. Another major difference is that it is virtually free of acidity (or below 0.8%). Have you ever tasted rancid oil? Overly processed and rancid oils have higher levels of oleic acid. These key differences make all the difference in the signature fruity taste and balance of European Extra Virgin Olive Oil. There is actually a panel of experts that ensures the flavor is how it should be by testing for the presence of attributes like fruitiness, bitterness, and spiciness. If the oil doesn’t have the expected flavor, it doesn’t receive the Extra Virgin rating.

Olitalia is a great choice for European Extra Virgin Olive Oil. We use this oil in almost all of our cooking because it is super versatile. Olive oil has a high smoke point (400 degrees) so it can be used in a variety of ways from a sauté to a deep fry. We also use it when baking all of our holiday quick breads and cookies! Olitalia believes all great cooking revolves around great oil. Olitalia is the #1 brand most used by chefs in Italy and is now available for home cooking in the US. Look for Olitalia at Eataly locations.
