Coconut Oil Chocolate Chip Cookie Bars {Vegan}

I love making chocolate chip cookies for a treat but sometimes it’s just too time consuming waiting for the dough to chill and making individual cookies. Bars are a much easier and quicker way to go. These chocolate chip cookie bars are thick and chewy with just the right amount of sweetness. They are also made with coconut oil which gives them a slight crispy texture. They are super simple to make and so delicious. The hardest part about these cookie bars is waiting for them to cool so you can slice into them and enjoy!

Ingredients

2 ¼ cups bread flour
½ tsp baking soda
½ tsp salt
1 cup melted coconut oil
¾ cup cane sugar
¾ brown sugar
1 tsp vanilla extract
Flax egg (1 tbsp flaxseed meal + 3 tbsp water)
1 heaping cup vegan chocolate chips
Maldon sea salt (for topping)

Directions

Preheat oven to 375. Line an 8×8 pan with parchment paper. Combine bread flour with baking soda and salt in a medium sized bowl. Add melted coconut oil, sugars, vanilla extract and flax egg to bowl and mix throughly. Fold in chocolate chips. Press dough into 8×8 dish.

Bake for 40 minutes or until golden brown on top. Top with a sprinkle of sea salt. Let cool for at least one hour before cutting into bars (otherwise they will crumble). Enjoy!
