Happy International Waffle Day! Waffles are one of my family’s favorite breakfast foods and Van’s Foods is our top choice for frozen waffles. Van’s Foods offers several delicious varieties of waffles including gluten-free, organic, multi-grain, and mini’s, so everyone in your family can enjoy a delicious and wholesome breakfast!

My favorite three Van’s Foods waffles are the organic, gluten-free, and multigrain. No matter which variety you choose, you will love the fresh and flavorful taste. Additionally, you can be confident that you are starting your day off right, since these waffles are packed with healthy grains along with fiber and protein.

There are so many ways to enjoy Van’s Foods waffles but a few toppings I like to add are:

*Fresh chopped fruit with greek yogurt
*Almond butter, sliced bananas, and sprinkled chia seeds
*Sliced avocado and eggs

To celebrate International Waffle Day, I have included a delicious recipe for Apple Pie Waffles. Enjoy the flavors of warm apple pie for breakfast in about 10 minutes or less!

Apple Pie Waffles

(serves 2)

1/2 cup chopped pecans
3 medium sized apples (washed, peeled, and cut into thin slices)
1 tbsp fresh lemon juice
1 tbsp cane sugar
1 tbsp brown sugar
1-2 tsp ground cinnamon
1/4 tsp ground nutmeg
1 tsp arrowroot flour or cornstarch
Pinch of salt
1 tbsp butter
4 Van’s Foods waffles (toasted and buttered)

Directions

Preheat oven to 400. Place chopped pecans on cookie sheet and toast in oven for about 5 minutes or until fragrant. Remove from cookie sheet and reserve for later. In a medium sized bowl sprinkle lemon juice over apples. In a separate bowl, mix together sugars, spices, and arrowroot flour. Pour this mixture over apples and mix until apples are evenly coated. Next place apple mixture in a saucepan with butter on burner over medium heat. Stir constantly for about 5 minutes or until apple have softened and cooked down. Pour mixture immediately over toasted/buttered waffles, top with toasted pecans, and enjoy!
