With summer coming to a close, I have been incorporating all of the season’s last fruits and vegetables from our organic garden into a variety of unique and fun dishes. One of my family’s favorite things to have as a healthy snack is fresh salsa with Food Should Taste Good® chips. This Pear Mint Cucumber Salsa is a blend of sweet and tart fruits that are balanced by fresh mint and a cucumber base. The combination is delicious and super simple to prepare, making it a perfect appetizer or satisfying snack. I suggest paring it with either Food Should Taste Good® Mutligrain Chips (if you like salty and sweet) or Food Should Taste Good® Sweet Potato Chips.
Ingredients (makes about 4 cups)
3 medium sized cucumbers, chopped
1 large pear, chopped
1 large granny smith apple, chopped
1/2 cup red onion, diced
2 tsp lemon juice
1/4 tsp freshly ground pepper
1 sprig of fresh mint leaves
Method
Chop cucumbers, pear, and apple to desired consistency (I like chunkier salsa so I chopped just slightly) and place in medium bowl. Add diced red onions to mixture and stir well to evenly incorporate. Next add lemon juice, pepper, and mint leaves and mix well. Place in refrigerator for at least one hour to allow flavors to blend. Enjoy!
