Banana Chocolate Chip Coconut Bread

If you are a fan of banana bread, you are going to love this version loaded with chocolate chips and coconut! This bread is super moist and the flavor is amazing. The best part of it is that it only requires one banana because how many times have you found yourself with just one banana that is too ripe to eat but would make a perfect bread? 1 ripe banana
6 oz. cup vanilla or plain yogurt (I like to use Stonyfield’s)
1 stick of softened butter
1 tsp vanilla
2 tsp baking soda
1 tbsp apple cider vinegar
2 cups all-purpose flour
1 cup sugar
3/4 cup chocolate chips
3/4 cup shredded coconut


Preheat oven to 350. Thoroughly mash banana in large bowl. Next add in butter, vanilla, and yogurt and blend well. Add baking soda and apple cider vinegar into mixture. Now add the sugar and flour one cup at a time. Lastly, blend in chocolate chips and coconut. It is normal for the dough to be very thick, almost like cookie dough. Pour the dough into a 9 x 5 loaf pan. Bake for about 1 hour or until knife inserted in center comes out clean.

    This sounds really good and healthy. I always have over ripe bananas, this would be a great way to use them up.
