I was able to try out the Baker’s Favorite box and was impressed by all the different spices included in this awesome box. I was very excited to try out a few of the baking spices in the Baker’s Favorite box so I came up with a new recipe for oatmeal raisin cookies. These egg-free cookies are so tasty and packed with coconut, raisins, and pecans. They are perfect for an after-dinner treat or as a breakfast cookie to start off your day!

Loaded Oatmeal Raisin Cookies (Egg-Free)

Ingredients
1 cup canola oil
2 cups vanilla or plain greek yogurt (6 oz each)
1 cup white sugar
1 cup brown sugar
1 tbsp apple cider vinegar
1 tsp baking soda
1 tsp vanilla
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
3 cups oats
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tsp ground cloves
1 cup raisins
1 cup pecans
1 cup coconut

Method
Preheat oven to 350. Lightly grease cookie sheet. In a large bowl mix together flour, baking soda, salt, and spices. Next stir in sugars until well blended.

In a separate bowl, stir together greek yogurt, canola oil, and vanilla. Mix together baking soda and apple cider vinegar in a small bowl, then add into yogurt and oil mixture. Pour wet ingredients into dry ingredients and stir until thoroughly blended.

Slowly begin to incorporate oats, coconut, raisins, and lastly pecans into cookie dough mixture stirring well after each addition. Once dough is well mixed place in refrigerator for at least one hour.

Roll chilled dough into 1 inch balls and place about 1 inch apart on cookie sheet. Bake for about 20 minutes or until cookies appear golden brown.

    Too hard to choose! I love all of the spices. The Organic Black Tea (Orange Raspberry Swirl) sounds really tasty, too.

    I would really like to try the Organic Adobo Seasoning. I like the fact that it is salt and sugar free. It says it’s spicy, but not hot. Also, it’s so versatile. They had a list of so many different ways you could use this.
