Oatmeal Chocolate Chip Cookie Bar Recipe (Butterless & Egg-Free)

I love baking cookies but I also like how easy it is make cookie-bars. This recipe is simple to make and absolutely delicious without any added butter or eggs. The bars are chewy, thick and have just the right amount of sweetness! They also fill a large 13×9 pan so you will have plenty to share!

1 cup canola oil
1 cup brown sugar
1 cup granulated white sugar
1 cup plain greek yogurt (I like Stonyfield’s)
1  tsp vanilla
2 cups flour
2 cups oats
3/4 cup semi-sweet chocolate chips
1/2 tsp salt
2 tsp baking powder
1/2 cup pecans (optional)

Preheat oven to 375. Spray 13×9 baking dish with cooking oil. Combine oil, sugars, yogurt and vanilla in bowl until thoroughly blended. In another bowl, combine flour, oats, salt, and baking powder.

Slowly fold dry ingredients into sugar mixture. Once completely blended, fold in chocolate chips and pecans (if using).

Spread and press batter into pan evenly (batter will be thick). Place in preheated oven and bake 30 to 40 minutes or until top is golden brown and toothpick inserted in center comes out clean. Let stand at least one hour for bars to set before cutting.
