With the rainy conditions we have had in the Northeast these past couple of weeks, our carrots and kale took off! We were able to fill up an entire basket with kale while also having several delicious carrots for a salad. One of my favorite things to make when we have an abundance of kale are seasoned kale chips. They take less than 15 minutes to make and are super healthy!
Ingredients
Kale (washed and dried thoroughly)
Olive Oil
Salt
Pepper
Method
Preheat oven to 350. Chop kale into small pieces (about the size of an average chip) and spread out evenly on baking sheet. Lightly drizzle olive oil over top of kale and toss to evenly distribute. Season with salt and pepper. Place in preheated oven and bake for about 10 minutes. Serve immediately and enjoy!

I love kale chips and so does my 2 year old. Do you know how long they keep? and what the best way to store them is?
That’s so great and what a healthy treat for your little one! Typically homemade kale chips do not last too long and taste best while still warm from the oven. I am still trying to figure out how the chips at the store have such a long shelf life but it seems like the kale they use is a much thicker variety and it may have something to do with the seasonings they use.
I just love kale chips. I make them at least once a week. They and roasted chickpeas are probably my favorite go-to snacks of late. :)
