Loaded Vegetarian Quesadillas

This is a great recipe if you need a quick and easy dinner. It is vegetarian, budget friendly, and is loaded with delicious flavor!

Whole Wheat Tortillas
16 oz Shredded Monterey Jack or Cheddar Cheese
(1) Small Can Black Beans
(1) Small Can Corn
(1) Red Bell Pepper (chopped)
(1) Avocado (chopped)
Salsa (for topping)
Sour Cream (for topping)

Set oven to broil. Place one tortilla on cookie sheet. Spread shredded cheese around the entire tortilla to your preference. Layer beans, corn, and bell pepper on top of cheese to the amount you would like. Then add a bit more cheese on top of the vegetables/beans and top with another tortilla. Place in oven on bottom rack for about 5 minutes or until cheese is melted. Move up to the top rack for about a minute so top of quesadilla becomes crispy and slightly browned. Remove from oven and let stand for about 1-2 minutes. Then cut into fours and stuff with avocado and top with sour cream and salsa.
