Extra virgin olive oil has always been created through this method and is known as the first cold pressed olive oil. No heat or chemicals are used, only the fresh pressed juices of olives. This allows for the purest, most delicious flavor along with full nutritional value. Extra virgin olive oil is also virtually free of any acidity and is below 0.8% (if this percentage is higher, it’s an indication of improper production and rancidity).  Additionally, extra virgin olive oil is tested for peroxide levels, the lower the levels the fresher the oil and more rapid processing. Before extra virgin olive oil is ready to hit store shelves, a panel of trained expert tasters test for any taste defects and the presence of positive attributes of fruitiness, bitterness, and spiciness. If the oil lacks any of these qualities, it won’t receive the Extra Virgin rating.

To check the authenticity of extra virgin olive oil, look for the country of origin on the label as well as QR code technology that traces the production back to source. You can also look for the European Union PDO certification (Protected Designation of Origin – also know as DOP in Italian) or PGI (Protected Geographical Indication – also known as IGP in Italian).

Kale Parmesan Angel Hair Pasta

Ingredients

4 cups of fresh kale, chopped
3/4 cup extra virgin olive oil, divided
1 cup parmesan cheese, finely shredded
2 cloves garlic, minced
16 oz angel hair pasta
salt/pepper

Directions

Boil pasta in large pot of salted water according to package instructions. While pasta is cooking, add 1/4 cup extra virgin olive oil to skillet on medium heat. Add kale and garlic and saute until fully wilted and cooked down. Remove from heat. Drain pasta and add remaining 1/2 cup olive oil to pasta. Add kale/garlic to the pasta and stir in 1/2 cup of parmesan cheese. Add salt and pepper to taste. If needed, more olive oil can be added to coat pasta. Sprinkle remaining parmesan on top of each serving and enjoy immediately.
