One of my favorite quick and easy desserts to make with cherries is a yogurt parfait with a sweet cherry compote filling. This is super simple to prepare and great for a treat on a warm summer night.
Cherry Yogurt Parfait
1 1/2 cup Chelan Fresh™ Sweet Cherries, pitted and halved
1/4 cup water
2 tbsp sugar
1 cup yogurt
1/4 cup toasted sliced almonds
1/4 cup granola
To a small saucepan add sugar and water. Heat over medium heat and stir until sugar is dissolved. Add in cherries and bring to a simmer. Simmer on medium-low for 15 minutes, stirring occasionally. Remove from heat and cool.
Add 1/2 of the yogurt to parfait cup. Top with cooled cherry compote (reserving a small amount), toasted almonds, and 1/2 of the granola. Next add the remainder of yogurt and top with the remaining ingredients. Enjoy immediately!
