After school is a super busy time for my family of 5. With evening activities scheduled throughout the week, snack time is an important part of the day for my girls to recharge. I try to incorporate a healthy balance of fruits/veggies along with their favorite go-to snacks. Since veggies are not always their number one choice, I was excited to try out the new varieties of McCain® Veggie Taters™. These delicious little tater tots bake quickly and are a delicious way to sneak some veggies into snack time.

One snack my kids absolutely love is kebabs. Whether they are sweet with fruits or savory with vegetables, kebabs are always a fun and satisfying snack! Broccoli Cheddar Chicken Kebabs are a quick protein-packed snack for after school. Many of the ingredients can be prepped beforehand and they are done in just 10 minutes!
Broccoli Cheddar Chicken Kebabs with Sour Cream Dip
(Makes 8 kebabs)
2 cups precooked chicken, cubed
2 cups broccoli, chopped
1 cup precooked McCain® Potato, Broccoli & Cheddar Veggie Taters™
1/2 cup cheddar cheese
8 bamboo skewers
For the Dip:
1/2 cup sour cream
2 tsp chopped chives
1/4 tsp onion powder
1/4 tsp salt
Preheat oven to 425. Line baking sheet with aluminum foil. Slide Veggie Taters™, chicken, and broccoli on skewer in a pattern two times. Repeat this process for all 8 skewers. Sprinkle cheddar cheese on top of skewers. If you prefer, you can also leave the cheddar cheese off and enjoy them roasted plain as well. Bake for about 8-10 minutes or until cheese is melted and broccoli is softened.
While kebabs are baking prepare sour cream dip. Place 1/2 cup sour cream in a small bowl. Mix in onion powder, salt and 1 tsp of the chives. Sprinkle the remainder of the chives on top of dip.
Once kebabs are done, let cool for a couple of minutes and then enjoy with sour cream dip!
