Coping with Migraines During Holidays + Vegan Apple Crisp Recipe

The holidays are one of my favorite times of the year but also trigger painful migraines due to stress, increased sugar consumption, and lack of sleep. I know a migraine is about to occur when an overwhelming feeling of fatigue takes over making it difficult to even keep my eyes open. One dessert I love to bake with my daughters around the holiday season is apple crisp. This vegan version of the recipe will fill your home with a delicious aroma and is a family favorite! The apples bake to tender and juicy perfection as they are topped with the sweet, crispy walnut oat topping.

Vegan Apple Crisp

6-8 medium apples, peeled and sliced thin
2 tbsp lemon juice
2/3 cup packed brown sugar
¾ cup whole wheat flour
¾ cup oats
½ cup vegan butter
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
½ cup chopped walnuts

Preheat oven to 350. Grease an 8×8 square baking dish. Place apple slices in a large bowl and coat with lemon juice. Pour into prepared baking dish. In a medium bowl add all of the remaining ingredients except the butter and walnuts and stir until evenly incorporated. Cut in butter with a fork until mixture becomes crumbly. Stir in walnuts. Crumble mixture overtop of the apples. Bake for 60 minutes or until topping is browned and apples are bubbling at the sides. Let stand for 10 minutes. Serve warm with coconut whipped topping or vegan vanilla ice cream.

    I get migraines a couple times a year. Excedrin always helps… I love that it has caffeine. Coffee alone helps me some days, but I grab Excedrin when I need extra help!

    Also, your vegan apple crisp looks delicious! Yum!
