Over the past few months, I have made an effort to prepare healthier weeknight meals for my family that are still quick and easy to make. One example of a meal that can easily be made more nutritious is spaghetti. Replace traditional noodles with vegetable noodles made with just about any vegetable from zucchini to carrots. They cook quicker than a traditional noodle and won’t leave you with the same bloated feeling as flour noodles.

One of my favorite vegetables to spiralize are sweet potatoes. With the Brieftons Spiralizer making sweet potato noodles is a breeze. Just load the sweet potato into the spiralizer and turn the crank to create beautiful long noodles. Below is a delicious recipe that is perfect for busy weeknights.

Sweet Potato Noodles with Kale and Garlicky Chickpeas

Serves 6

Ingredients

2 large sweet potatoes (spiralized into noodles)
2 cups packed kale
4 tbsp + 1/4 cup olive oil
2 cans of chickpeas
1 tsp garlic powder
1 tsp salt
Dash of smoked paprika

Directions

Preheat oven to 425. In a bowl combine chickpeas with 1/4 cup of olive oil and spices. Pour onto baking sheet spreading into a flat layer. Bake for 15-20 minutes or until golden brown and crispy. Meanwhile, heat 4 tbsp olive oil in skillet. Add sweet potato noodles and cook for about 3-4 minutes. Slowly add in kale and continue sautéing until all of the kale has wilted. Top with roasted chickpeas. Serve immediately.
