Oatmeal raisin cookies are one of my favorite types of cookies. The perfect oatmeal raisin cookie to me is thick, chewy, and loaded with nuts and raisins. Another thing that makes a cookie perfect is if it’s easy to make and has simple ingredients. After a few recipe tests, I accomplished all of the above in the perfect one bowl vegan oatmeal raisin cookie. Enjoy!
1 cup bread flour
1/3 cup oat bran
2 cups old fashioned rolled oats (not quick cook)
1/4 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1 cup vegan butter (I use Earth Balance)
3/4 cup maple syrup
1/4 cup almond milk
1 flax egg (1 tbsp ground flaxseed + 3 tbsp water)
1 cup raisins
3/4 cup chopped pecans
Mix the first 6 dry ingredients listed above in a large bowl. Next incorporate the butter into the dry ingredients until it is completely blended in and dough is stiff. Next stir in the maple syrup, almond milk, and flax egg. Lastly, add in the raisins and chopped pecans. Chill the dough for at least 1 hour.
Preheat oven to 375. After dough has been chilled, form dough into 2 tbsp sized balls about 2 inches apart on a cookie sheet lined with parchment paper. With the palm of your hand or back of a spoon slightly flatten each cookie dough ball. Bake for about 15-17 minutes or until the tops of cookies are golden brown color. Let stand for about 10 minutes and then enjoy or store in airtight container for 5-7 days.
