Banana Bread Oatmeal {Vegan & Gluten-Free}


One of my favorite things for breakfast (especially on a cold PA winter morning) is oatmeal loaded with fresh fruit and nuts. I also love banana bread so I thought I would combine the two for an amazing wholesome and hearty breakfast. It’s ready in about 10 minutes and is packed with protein so you will likely be full until your next meal. Enjoy!


2 cups almond milk
1 cup old fashioned rolled oats (gluten-free oats can be used as well)
1/4 tsp cinnamon
1/4 tsp nutmeg
Pinch of ginger
1 banana, sliced
1/4 cup pecans, chopped
1 tsp chia seeds
2 tbsp maple syrup


Toast pecans for about 5 minutes (or until fragrant) at 400 degrees. Meanwhile, bring almond milk to a boil in a medium pot. Once boiling add in oats and turn heat to low. Simmer for about 10 minutes or until milk is almost all absorbed. Stir in spices and 1 tbsp of maple syrup. Pour into a large bowl. Top with banana slices, pecans, and chia seeds. Drizzle with remaining tbsp of maple syrup.
