Vegan Banana Strawberry Bread

I love experimenting with different ingredients in my banana bread recipes. With the end of summer here, we had some strawberries that needed to be used up so I decided to throw them into my latest batch of banana bread. They add a delicious sweetness to the recipe that you will be sure to love! This recipe is easy to make and delicious straight out of the oven but best the next day when the flavors really come through.

Ingredients

2 cups bread flour
1 1/2 tsp baking soda
1/2 tsp salt
1 cup cane sugar
3 ripe bananas, mashed
3/4 cup vegan butter
1/4 cup unsweetened almond mik
1 tbsp chia seeds
1/2 cup chopped pecans
1/2 cup strawberries

Method

Preheat oven to 350. Lightly grease a 8 x 4 loaf pan. In a small dish stir together chia seeds and water and let stand while preparing other ingredients. In a large bowl blend together bread flour, baking soda and salt. In another bowl blend together sugar and butter until light and fluffy. Then add in almond milk, bananas, and chia egg and stir until well mixed. Add wet ingredients to the dry and mix well. Next gently stir in chopped pecans and strawberries. Pour into loaf pan and bake for about 1 hour (begin to check at about 40 minutes as cooking times can vary). Enjoy!
