This Apple Salad has quickly become a family favorite over the summer. It is delicious, easy to make, and perfect for lunch or dinner! I hope you enjoy the fresh flavors in this recipe!
Ingredients
10 oz arugula
2 medium sized apples, diced (I like to use Fuji, Granny Smith, or Gala)
1/2 cup shredded carrots
1/2 cup gorgonzola cheese
1/2 cup golden raisins
1/2 cup pecans, chopped
Juice of 1 lime
1/2 cup olive oil
1 tbsp apple cider vinegar
1 tsp oregano
1/2 tsp garlic
Fresh ground pepper
Directions
Place arugula in a large bowl. Gently stir in apples, shredded carrots, cheese, raisins, and pecans. In a separate small dish combine the juice of 1 lime with olive oil. Stir in apple cider vinegar and spices. Now add the vinaigrette dressing to the salad and evenly incorporate. Add fresh ground pepper when serving.
