I LOVE banana bread. It is one of my favorite things to have in the morning for breakfast or as a mid-day snack. I have tried several recipes for vegan banana breads but none of them really turned out how I wanted. So I set out to create my own version! This banana bread tastes amazing and you won’t even realize its vegan or free of refined sugars. It is super moist and has just the right amount of sweetness. Another great thing about this banana bread that sets it apart from many other vegan banana breads, is how high it rises. Enjoy!
2 cups whole wheat pastry flour
1 1/2 tsp baking soda
½ tsp salt
1 tsp cinnamon
½ cup maple syrup
3 large very ripe bananas
2/3 cup coconut oil (melted)
½ cup chopped pecans (optional)
Preheat oven to 350. Grease an 8×4 loaf pan. Mix all of the dry ingredients together in a large bowl. Melt coconut oil and allow to cool slightly. Mash bananas in a medium bowl. Next add in coconut oil and maple syrup and stir until combined. Pour wet ingredients into dry ingredients and stir until completely mixed. Finally, fold in chopped pecans. Bake for approximately 1 hour or until skewer inserted in center of loaf comes out clean.
