I love cooking with pasta because it makes it super easy to create a delicious and healthy meal while also always being budget friendly. This pasta recipe incorporates all of your favorite garden vegetables in one dish and is ready in about 10 minutes. Enjoy!
16 oz fusili pasta
2-3 cloves garlic
1/4 cup olive oil
1/2 cup diced carrots
3 large heirloom tomatoes, chopped
1 cup sliced mushrooms
1 large green pepper, chopped
1/2 cup parmesan (for topping)
1/3 cup fresh basil (for topping)
Cook pasta according to package directions. While pasta is cooking, heat a large skillet with about 2-3 tbsp of olive oil. Add carrots and pepper and saute for about 5 minutes. Next add in garlic and remaining vegetables and continue to saute until tender (about 2-3 minutes).
Mix vegetables into cooked pasta. Stir in olive oil to coat the pasta and vegetables. Top with parmesan cheese, salt, pepper, and fresh basil.
